Нам понадобится
Цыпленок-бройлер — 1 шт. (вес примерно 1,5 кг), 250 г сыра, 100 г соленых огурцов, 100 г бекона, 50 г оливок, 110 г болгарского перца, 80 г моркови, соль, перец, растительное масло

Для начала нам необходимо из целого цыпленка сделать так называемую «рубашку». Аккуратно, с помощью надрезов, снимаем филе с костей, освобождаем его от всех конечностей, оставляем лишь кожицу, которая станет оболочкой для рулета, что удержит все соки внутри.

На готовую «рубашку» натягиваем пищевую пленку и отбиваем ее молотком, равномерно растягивая куриное филе. Солим и перчим курицу, все, разумеется, по вкусу, но советуем использовать чуть больше специй, чем вы привыкли, так как начинка рулета заберет изрядную часть соли и перца.

Теперь переходим к начинке. Порядок, в котором мы добавляем ингредиенты, не играет никакой роли. Начнем, пожалуй, с бекона: немного американская история, но которая очень нравится нашим людям. И еще один неоспоримый плюс бекона — его аромат.

Добавляем болгарский перец и морковку, которые мы предварительно пассеровали (обжаривание на высоком огне тонко нашинкованных овощей). И оливки, разумеется, без косточек.

Не обойдется в нашем рецепте и без столь любимых русскому человеку соленных огурцов. Они не только очень гармонично сочетаются с курицей, но и после духовки приобретают удивительно приятную текстуру. Посыпаем все это сверху сыром. Сыр можно использовать любой, все на ваш вкус, но мы выбрали моцареллу из-за ее тягучести и более нейтрального вкуса, который впитывает в себя ароматы всех остальных ингредиентов.

Аккуратно заворачиваем рулет и кладем его на слой фольги, в которой он и будет запекаться. После немного смазываем фольгу и сам рулет растительным маслом для дополнительного аромата и, что еще важнее, во избежание пригорания. Отправляем готовый рулет в духовку на 40 — 45 минут при температуре в 180 градусов.

Куриный рулат практически готов, его надо лишь нарезать на слайсы: потоньше, потолще — каждый делает, как он хочет. Получается очень вкусная и сытная закуска, которую можно подавать в любом виде (как холодном, так и горячем) и к любым прочим блюдам и напиткам.
