Что приготовить на Новый год? SCAPP снова пытается ответить на ежегодный вопрос, начинающий терзать всех решившихся встретить Новый год дома. Традиционные и общепринятые позиции типа оливье, сельди под шубой и мимозы, кажется, никогда не выйдут из моды, но их всегда можно дополнить чем-то новым и не менее вкусным.
Как и в прошлом году, мы обратились к 5 шеф-поварам города Сочи, чтобы они составили альтернативное меню для новогоднего стола-2016.

1. Запеченный баклажан с сыром

Мелко режем лук и обжариваем его на оливковом масле. Делаем это на медленном огне, постоянно помешивая, тогда лук будет мягкий. Когда лук станет прозрачным, добавляем рис. Обжариваем рис при температуре 50 — 60 градусов, что поможет нам выйти на степень готовности al dente.

Добавляем шампанское. Постепенно спирт выварится, оставив в рисе только вкус вина.
Начинаем понемногу добавлять заготовленный овощной бульон. Максимум, чтобы рис был слегка покрыт водой. С той минуты, как рис закипит, кипение не должно останавливаться. При этом кипение должно быть очень легким. Не забывайте постоянно помешивать рис. Когда первая порция бульона выпарится, добавляем еще одну. Не забываем помешивать рис.
- Важно: в рис нужно вливать горячий бульон, поэтому перед смешиванием доведите его до кипения.
Добавляем молоко двумя порциями (это фишка шефа).
Добавляем сливочное масло и сыр пармезан, которые превратят оставшуюся воду в крем. Чуть позже в последний раз добавляем бульон.
Соль, перец.
Параллельно готовим соус для ризотто. Последовательно добавляем сливки, соль и шафран. Доводим до кипения и помешиваем до состояния крема. В среднем 5 — 7 минут.
Украшаем лепестками роз, черной икрой и семенами граната. Кстати, лепестки розы съедобны и уже очень давно используются в кулинарии.
