Это действительно непохожие форматы. Мы познакомились с «Родиной» год назад, а сотрудничать начали в ноябре 2018-го. Я сделал для себя вывод, что люди, которые работают в отелях, — это суперпрофессионалы, у них есть системность, понимание стандартов, навыки организации процессов, но им сложно работать в обычном ресторане. Я вообще за открытое общение без масок и снобизма, уверен, что ценится только настоящее. А потому в рамках гастроужинов я не изменяю себе и активно общаюсь с каждым гостем. Мне нравится такой подход и я вижу ответную реакцию. Думаю, это правильно, а главное — естественно: максимум открытости, вкусной еды и напитков.
Итак, ты приехал в Сочи. Задача — разработать интересное меню, в котором нашёл бы отражение и местный колорит. В рамках работы над меню у тебя появились продукты, в которые ты влюбился именно здесь? Может быть, хурма, черкесская груша?
Эти продукты я и так знал. Я же советский ребёнок. Но вот если говорить про грушу, то я не люблю компот из сухофруктов ещё с детства. А поскольку это очень локальный продукт, хотелось с ним что-то сделать. И вот мы на ужине в «Чёрной магнолии» подали осетрину с соусом из этой груши. На первый взгляд, сочетание странное — груша доминирует. Но мы так её забланшировали, что получилось круто. Хурма. Этот фрукт я просто обожаю! Если поставить передо мной таз хурмы, я её съем, даже не сомневайтесь. Такая же история с фейхоа, лимонами, чурчхеллой — я всё это люблю, и в Rodina Grand Hotel & SPA на каждой точке питания мы постарались сделать что-то полностью из локальных продуктов. Конечно. Мы плотно работали с сомелье. А ещё мы обновили сет настоек, сделали немного по-другому. Более того, на гастроужине мы сделали первую подачу самой необычной. Я привёз «Зелёные колготки» — очень странное вино, которое интересно попробовать. К этому напитку мы подали строганину из нерки и резким горчичным соусом. Вот все эти пары я тщательно подбирал.

Одной темы нет, но думаю, что больше остальных выдерживается русская тематика. Меня часто спрашивают: а какую кухню ты готовишь? Не знаю, я просто стараюсь делать вкусно. В «Чёрной магнолии» тоже есть блюда из печи, просто мы их подготоваливаем здесь, в BSBC, а доводим до подачи уже на месте. Ту же томлёную баранину с сухофруктами готовим именно так.
